Bananas Foster Pancakes
Ingredients:
- 2 cups all-purpose flour
- 3 tbsp granulated sugar
- 1 tbsp baking powder
- 2 tsp ground cinnamon
- 1 tsp baking soda
- ½ tsp kosher salt
- 1½ cups whole milk
- 2 large eggs, beatenlightly
- 3 tablespoons of melted unsalted butter, along with an additional 4 teaspoons of unsalted butter
- 1 tsp banana extract
- 1½ bananas, mashed
- Whipped cream with flavoring, for topping (if desired)
Bananas Foster Sauce:
- 4 tablespoons (half a stick) of unsalted butter
- ½ cup of tightly packed light brown sugar
- 2 teaspoons of rum extract or rum
- 1½ bananas, cut into slices about ⅛ inch thick
- ½ cup of coarsely chopped roasted pecans
Directions:
- Active: 35 mins
- Total time: 35 minutes plus cooling time
- Yield: 4 servings
- To prepare the banana pancakes: In a medium-sized mixing bowl, combine the flour, sugar, baking powder, cinnamon, baking soda, and salt using a whisk. Stir in the milk, eggs, 3 tablespoons of melted butter, and banana extract, ensuring all components blend well. Gently fold in the mashed bananas.
- In a 12-inch nonstick skillet, dissolve 1 teaspoon of the butter over medium-high heat. For each pancake, use a ½-cup measuring cup to pour the batter into the pan so as to prepare three pancakes simultaneously without crowding them. Continue cooking until bubbles form on their surface, which should take about 1½ to 2 minutes. Then turn them over and let them cook for another minute until they're lightly browned on the flip side. Transfer these ready-made pancakes onto a wire rack. Proceed with this method repeatedly, replenishing your skillet with an additional 1 teaspoon of butter before starting new rounds.
- To prepare the bananas Foster sauce: Wipe out the skillet used for the pancakes, then melt the butter over medium-high heat. Add the brown sugar and stir until the sugar has dissolved and the sauce thickens, about 1½ minutes. Add the rum extract, let simmer for about 30 seconds, then add 1 tbsp of water. Carefully add the sliced bananas and pecans to the pan. Stir until the bananas and pecans are well coated and warmed through, about 30 seconds.
- Divide the pancakes onto four plates and add a spoonful of whipped cream on top (if available). Drizzle the sauce over them and serve right away.
- Keep pancakes (minus the whipped cream and sauce) in a sealed bag inside the fridge for up to 3 days. Store remaining sauce in an airtight container within the refrigerator also for as long as three days.
